cookStuff: Maple Shortbread Cookies
I drove to Alaska recently. While passing through Canada, I picked up several bottles of maple syrup at a grocery store. Nothing super fancy, but real maple. I tweaked one of my cookie recipes to take advantage. This makes 18-24 cookies.
Raw Materials
- 2 cups all-purpose flour
- 0.5 teaspoon salt
- 0.5 cup maple syrup
- 1 cup softened butter
- 1 teaspoon allspice (optional)
- 1 teaspoon ground ginger (optional)
- 2-5 tablespoons cinnamon (optional)
Work Instructions
- Get your oven heating to 350° F.
- Cream the syrup and butter in your mixer; let it go until it's nice and smooth.
- Sprinkle in the salt while the mixer is running to distribute somewhat. Then slowly add the flour. Mix until a smooth dough forms.
- If you're using any of the optional ingredients, add them now.
- Spray your baking sheet with baking spray, or line with parchament paper.
- Scoop portions about the size of a golf ball onto the tray, then gently flatten into a disc shape.
- Bake at 350° for 10-12 minutes, when the edges are starting to get golden brown.
- Cool on a wire rack, then break one in half to admire your work. Stuff it in your mouth.
