cookStuff: Maple Shortbread Cookies

I drove to Alaska recently.  While passing through Canada, I picked up several bottles of maple syrup at a grocery store.  Nothing super fancy, but real maple.  I tweaked one of my cookie recipes to take advantage.   This makes 18-24 cookies.

Raw Materials

  • 2 cups all-purpose flour
  • 0.5 teaspoon salt
  • 0.5 cup maple syrup
  • 1 cup softened butter
  • 1 teaspoon allspice (optional)
  • 1 teaspoon ground ginger (optional)
  • 2-5 tablespoons cinnamon (optional)

Work Instructions

  1. Get your oven heating to 350° F.
  2. Cream the syrup and butter in your mixer; let it go until it's nice and smooth.
  3. Sprinkle in the salt while the mixer is running to distribute somewhat.   Then slowly add the flour.   Mix until a smooth dough forms. 
  4. If you're using any of the optional ingredients, add them now.
  5. Spray your baking sheet with baking spray, or line with parchament paper.
  6. Scoop portions about the size of a golf ball onto the tray, then gently flatten into a disc shape.
  7. Bake at 350° for 10-12 minutes, when the edges are starting to get golden brown.
  8. Cool on a wire rack, then break one in half to admire your work.  Stuff it in your mouth.
